An unusually early and abundant manuscript record
Compared with other ancient works, the New Testament survives in far more manuscripts and far closer to the time of composition. Abundance does not by itself prove the contents true, but it lets scholars reconstruct the original text with high confidence and makes the "legend grew over centuries" story hard to sustain.

Yes — mostly spelling and word order, exactly the kind of variation more copies produce. The vast majority make no difference to meaning, and the small number that matter for interpretation are openly footnoted in modern translations.
